That makes it one of the most climate-efficient protein sources available — roughly 15 times lower than beef (2,990 g) and about a third of chicken (620 g) per 100 g. Why tofu's footprint is so low

Tofu is made by coagulating soy milk, and soybeans are remarkably efficient crops.
